- Here is a recipe for salmon loaf using canned salmon which I think is
- quite good!

- Salmon Loaf
- Ingredients: 1 can (250g./8 oz.) pink salmon
- 1 beaten egg
- 1/4 c. (60 mL) milk
- 2 Tbsp. lemon juice
- 12-14 unsalted soda crackers (crushed)
- 1/2 tsp. salt
- a few sprinkles of pepper
- dash of celery salt
- dash of seafood seasoning (opt.)
- 1 Tbsp. chopped onion (opt.)

- Method: Mix all ingredients together in medium sized mixing bowl using
- hands or a spoon. Pat into greased loaf pan and sprinkle with dried parsley.
- Bake in preheated 350 F oven for about 20 minutes (or cook in microwave
- oven for about 7 min.). Serves 1-2. (Hint: I usually always double the
- recipe, since using only 1 tin of salmon can only serve 1-2 if the people
- are just moderately hungry!)
